Cooking with Lina 🍆 Stuffed Eggplant 


10 Italian eggplants*
1 cup ground beef
1/4 cup pine nuts
1 small can tomato sauce
1 medium onion
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup vegetable oil
Pomegranate molasses (optional)


  • Wash your eggplants very well
  • Partially peel the eggplant and cut in the middle with a knife
  • Arrange the eggplant in a skillet and sauté with oil until brown on both sides
  • Remove from pan
  • Use the same skillet to sauté the pine nuts until light brown then remove
  • Add 2 tablespoons of oil to the skillet and sauté onions
  • When they are translucent add salt, spices, and then the meat
  • Once the meat cooks
    • Add a drizzle of pomegranate molasses
    • Add the pine nuts
  • Place the eggplant on a baking tray
  • Stuff them one by one
  • Gently Add the tomato sauce
  • Bake stuffed eggplants at 350 degrees for 30 minutes
  • Enjoy! 😋

*If you can’t find Italian eggplant, use 1 big purple eggplant and cut in circles instead.
