Lentil Soup with Lina

Ready for a NEW Recipe? 🍲  Lina shows us how to make Lentil Soup!


1 cup of small brown lentils
8 cups of water
1 large onion
4 crushed garlic cloves
1/2 cup of cilantro
2 medium potatoes
1 bunch Swiss chard (or substitute spinach)
Juice of 2 lemons
3 tablespoons of olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin


  •  Rinse lentils very well and put in a pot on stove with 8 cups of water
  • Once it starts to boil, remove the foam and let it cook on low heat
  • Add more water if needed
  • Cut, then dice your veggies one by one
  • Once lentils become tender and still maintain their shape, go ahead and add carrots, then potatoes
  • Add Swiss Chard.  It will quickly reduce in size
  • Add all seasonings and let it simmer for 12-15 minutes
  • In a separate skillet with olive oil, add the onion and the chopped garlic
  • Stir for few minutes
  • Add the cilantro
  • Total cooking time 40 minutes

Note:  If you like a thicker soup, add 1 tbs of flour.
