Lentil Soup with Lina
Ready for a NEW Recipe? 🍲 Lina shows us how to make Lentil Soup!
Ingredients:
1 cup of small brown lentils
8 cups of water
1 large onion
4 crushed garlic cloves
1/2 cup of cilantro
2 medium potatoes
1 bunch Swiss chard (or substitute spinach)
Juice of 2 lemons
3 tablespoons of olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
Directions:
- Rinse lentils very well and put in a pot on stove with 8 cups of water
- Once it starts to boil, remove the foam and let it cook on low heat
- Add more water if needed
- Cut, then dice your veggies one by one
- Once lentils become tender and still maintain their shape, go ahead and add carrots, then potatoes
- Add Swiss Chard. It will quickly reduce in size
- Add all seasonings and let it simmer for 12-15 minutes
- In a separate skillet with olive oil, add the onion and the chopped garlic
- Stir for few minutes
- Add the cilantro
- Total cooking time 40 minutes
Note: If you like a thicker soup, add 1 tbs of flour.
