Cooking with Lina 🍛 Spinach with Rice and Vermicelli
1 big onion
4 cloves of garlic
2 bunches of spinach
1 lb ground beef
1 bunch of cilantro
2 tablespoons of olive oil
2 tablespoons of roasted pine nuts (optional)
In a pot, stir the chopped onion with 2 tbs of oil. Add the crushed garlic.
Then add the cooked meat. (leave out for vegan option)
Add the chopped cilantro and stir for a few minutes. Wash and drain the spinach and add to the mixture. Then add salt, black pepper and cinnamon. Let it cook for 20 minutes.
Rice and Vermicelli:
2 tablespoons of vermicelli
1 cup of rice
A pinch of salt
11/2 cup of water
2 tablespoons olive oil
Stir the vermicelli with the oil until golden. Wash and add the rice and salt, then add water. Let it cook for 15 to 20 minutes.
